Honing the Art of Japanese Cuisine at Harry San
At Harry San, excellence in culinary artistry is at the heart of what we do, and one of our shining stars, Chef Kadasia Cummings, is a perfect example of that passion and dedication.
Kadasia has been with our company for the past six years, beginning her journey humbly on the range in the kitchen, where she spent her first year mastering the fundamentals. Her talent and dedication soon saw her transition to our signature restaurant, Harry San, where she has remained a vital part of the team ever since.
Under the mentorship of renowned Chef Tasheka Tanabe, fondly known as ‘Chef GO’, Kadasia immersed herself in the intricate world of Japanese cuisine. With Chef GO’s guidance, she embraced the discipline, artistry, and precision required in Japanese cooking, steadily building her skills and deepening her knowledge.
In early 2025, Kadasia received a life-changing opportunity — a culinary voyage to Japan where Hedonism II sponsored this life-changing experience to include airfare, travelling expenses, and accommodation. Kadasia completed a transformative three-month intensive training program at the Japanese Culinary Academy, immersing herself in the art and discipline of traditional Japanese cuisine and drawing inspiration from the culture that has shaped one of the world’s most revered cuisines.
From mastering knife techniques to refining her skills in dashi preparation, sushi, and gyoza, she trained under esteemed chefs dedicated to culinary precision and cultural authenticity. The experience deepened her appreciation for Japan’s culinary heritage and sharpened her technical expertise, marking a significant milestone in her professional journey.
Now back at Harry San, Chef Kadasia is eager to infuse the menu with the techniques and flavors she’s discovered abroad. Over the coming months, guests can look forward to a refreshed menu that reflects her growth, creativity, and the traditions she so deeply respects.
Outside the kitchen, Kadasia brings her love for music to life — often entertaining guests with her singing at the Hibachi tables. It’s just one of the many ways she creates memorable experiences for everyone who dines with us. When she’s not cooking or serenading her guests, she enjoys unwinding with her favorite tunes.
Looking ahead, Chef Kadasia is committed to continuing her journey in Japanese culinary arts and is passionate about mentoring the next generation of chefs. Her story is one of growth, dedication, and a true love for the craft — and we are proud to have her as part of the Harry San family and by extension, Hedonism II.
Stay tuned for exciting new flavors coming soon to our menu — crafted with care and inspired by the traditions of Japan, through the eyes of our very own Chef Kadasia Cummings.
